I believe its due to this part of your code.

// Create a new method applyStaffDiscount here
applyStaffDiscount : function(){
this.total *= 1 - StaffMember.discountPercent/100;
}
};

Try changing it to this.

// Create a new method applyStaffDiscount here
applyStaffDiscount : function(){
this.total - StaffMember.discountPercent/100;
}
};

The rest is of the code is perfect though.
